Following on in our BOOST series, we have this brain boosting recipe that is all set to stimulate. Feeling mentally strong is just as important as feeling physically strong, so the correct nutrition is crucial to fuel ourselves. In this recipe, we've chosen blueberries, AKA absolute power fruit which obviously deliciously sweet, but are also packed full of antioxidants. Ever heard of cacao? No, not cocoa. Cacao is the raw form of cocoa before it has been processed which loses all its goodness. It is densely packed with antioxidants, magnesium and iron and can help to alleviate stress, anxiety and depression - a yummy go-to for brain boosting.

Makes 18-20 Small Cookies
Ingredients
255g oats
95g oat flour (blend oats into flour)
150g smooth almond butter
2 bananas (mashed)
2 tablespoons of cacao powder
35ml maple syrup
1 teaspoon of baking powder
80ml dairy free milk
1 teaspoon of vanilla extract
80g fresh blueberries
40g chopped almonds
Method
- Preheat oven to 180c and line two baking trays with parchment paper.
- In a bowl combine the mashed bananas, milk, vanilla extract, maple syrup and
almond butter. Combine.
- In a separate bowl combine the oats, oat flour, cacao powder and baking powder.
- Now pour the dry ingredients into the wet and combine thoroughly.
- Carefully fold in the blueberries and chopped almonds and then split the mixture
between approximately 18-20 balls and place them on the baking trays.
- Flatten into cookie shapes and bake in the oven for 12 minutes. Store in an airtight
container and eat within 3-4 days.
