Ayurvedic Wisdom on Nutrition

According to Ayurvedic wisdom, our appetite is our ability to digest and absorb nutrients with the help of digestive enzymes known as ‘agni’ or ‘digestive fire’, and this is central to health.
Eat food that is fresh! As our food dies, so do the nutrients within it. Ayurveda recommends eating well-cooked food with fresh ingredients, preferably organic, and says that you should taste and enjoy your food. It’s best to eat meals in a calm and peaceful environment without performing other tasks at the same time, sitting down and relaxed. This creates the best environment for good digestion. It is also wise to drink hot water with lemon juice or ginger to kindle your digestion before a meal.
Ayurveda suggests that we should eat when we are hungry, not simply to pass the time or satisfy cravings. Cook with culinary spices and include all size Ayurvedic tastes in your meal: sweet, sour, salty, pungent, bitter and astringent. Sip liquids during meals, but do not drink a lot of liquid while eating.
According to the wisdom of Ayurveda, lunch is the main meal of the day, for the best digestion. Breakfast and dinner should be light and you should not eat late in the evening after the sun has gone down. It is also recommended to take nutritional supplements or Ayurvedic herbs to balance your diet and your doshas. Try going for a gentle walk after you eat, to promote digestion and settle your food.
Ayurvedic wisdom suggests that each dosha type should focus on a slightly different diet in order to balance their dominant dosha.
Vata: Light diet of warm, soft foods, avoiding hard, raw, dry and indigestible food. All oils are good.
Pitta: Plenty of sweet, bitter and astringent foods, reduction of spicy, fried and salty foods.
Kapha: Plenty of pungent, bitter and astringent foods. Avoid sweet, sour and salt foods. Reduce oils, nuts and spices.
